WIAW, Mental Health Day

Happy thank-god-we’re halfway-to-friday day! Last night I was exhausted and didn’t want to stay up all night doing homework was not feeling too hot so Jason and I made the executive decision to take a mental health day today. We’re about halfway through the semester now (how did that happen?!) so it’s perfectly acceptable to miss a class in the name of sanity. And boy was that a good decision. A little rest and some fresh air and I feel like I can get back to the grind now. And of course, we got time to actually sit down and eat meals instead of eating standing up/walking/in the car on the way to school. And since it Wednesday…

Breakfast: whole wheat ginger pear waffle (recipe from Mama Pea’s cookbook)

Yummy yummy waffle recipe! Perfect for fall, and I almost can’t believe it’s vegan.

Lunch: salami, swiss cheese, sprouts and honey mustard on pita bread (sandwich of the day @ The Cheese Shop), salt and vinegar chips, orange sparkling water

Afternoon Snack: “pomegranate plunge” smoothie from Tropical Smoothie Café  (pomegranate, strawberry, banana, cranberry)

Dinner: pad thai noodles, long bean salad, and thai iced tea

The pad thai was so good tonight. I added a little vinegar this time and marinated the tofu beforehand, delicious! And Jason’s gotten really good at the thai iced tea–tastes just like the real thing. Dessert is still TBD, but it will likely be some homemade chocolate ice cream. We’re loving the homemade ice cream lately, and in fact I have a special one to share with you all tomorrow.

    I’ve always wanted to try San Pelligrino. Is it sweet?

      A little bit but not like soda. You should try it! The orange one is pretty much exactly like Orangina if you’ve had that one before. The lemon one is delicious too.
