I have survived the first exam!!! Don’t really want to talk about it though…it was extremely difficult and look me the entire 4 hours to complete. But the important thing is that it’s over. There are two more left, Contracts on Friday and Constitutional Law next week. But alas, blog world, I don’t want to abandon you! You keep me sane! So I will still try to post as often as I can.
This recipe isn’t exactly a recipe, it’s just a really good sandwich I had for lunch that I wanted to share!
Since I started reading healthy food blogs a few months ago, I find that I am super motivated to eat things that are good for my body. Something about seeing so many other people who care about fueling thier bodies the right way really encourages me. It’s hard to eat healthy if you don’t see anyone else around you doing so. So thank you, blogosphere! I love you. Aha, that reminds me!
Helen over at Helen, Naturally passed on this award to me! Thank you so much Helen! I have never received an award before so I’m excited. I don’t even recall how I found Helen’s blog but I know that it was literally one of the FIRST ones that I read, and I have loved trying many of her awesome oatmeal recipes and seeing pictures of her adorable family. Plus she’s a fellow Southern girl so I have much love for that! š

Ummm…my Snuggie, a flash drive, and my iPhone.

This is actually a hard question for me! Almond milk I drink every single day, so that’s gotta be one. And I think the other is probably chicken! Haha, I love my chicken, we eat it so much!
3. Name something you did today.
Learned how to play Words With Friends via my bff! Love it, it’s so fun.

Okay that was fun! Onto the sandwich! I didn’t really use exact quantities, it’s just a feel it as you go kind of thing.
Turkey Portabello Panini
- 2 slices good whole wheat bread
- fresh mini portabellas (also called baby bellas)
- chopped kale (I used frozen)
- provolone and cheddar cheese (or whatever kind you want)
- sliced tomato
- sliced turkey
- dijon mustard
- salt and pepper to taste
- olive oil for drizzling
-In a baking dish toss the mushrooms and kale in a tiny bit of olive oil, salt, and pepper. Roast at 350 degrees for 10-15 minutes.
-Spread a little bit of Earth Balance or butter on your bread before assembling the sandwich. Load up your sandwich with a little bit of mustard, tomato slices, turkey, the hot veggies, and then cheese on top (to help it melt).
-Heat a grill pan or panini machine. Grill the sandwich until golden brown on both sides. If the cheese still isn’t melted, pop it onto the baking sheet you used for the veggies and heat it for a few minutes in the oven. Cut and enjoy!
I ate this with half a granny smith apple and some natural chips on the side.
These chips are SOOO good! The multigrain flavored ones are so good too!!! And check out those ingredients! There’s quinoa in the chips!!! I will never eat regular chips again, these are so amazing.
And also a tall glass of that sparkling punch I made on Easter!
Hey at least it’s not high-fructose laden soda!

I like to have music playing low when I study so I don’t pay attention to background noises as much. Plus every 20-30 minutes I’ll play a really good song so I can wiggle a little, get the blood flowing again and refresh my brain!!

COFFEE COFFEE COFFEE. Besides the obvious caffeine boost, when I have a cup of coffee it makes me feel like I’m being more productive (no idea why). Plus I have to counteract all the coffee with lots of water which means lots of bathroom breaks, which for me is good because I keep focused longer if I take short breaks once an hour or so. So far as lunch I cant really help you there. I seem to always be going through different phases for lunch, but rarely does it involve cooking it myself. Right now I’m exploring the options around the new office. So far I’ve found a great taco place, decent sushi, a good burger place (goodstuff is a bit of a walk and this place pales in comparison, but still good), and a deli with AWESOME paninis. I had one the other day with turkey, baby spinach, artichoke, tomatoes, and some kind of cheese… so yummy. If it wasn’t for the tornado warning I would head over there today. Keep the questions coming! I like this part.
