Greek Yogurt Green Goddess Dressing

I’ve been feeling a little under the weather lately, one of those summer cold type things. I’ve been doing plenty of hippie things to get rid of it like taking shots of apple cider vinegar throughout the day (easier than it sounds, I promise). But I figure green stuff is probably a good thing when you’re sick, right? A delicious creamy dressing made with greek yogurt and fresh herbs!

Spring and summer are the perfect time to go crazy with fresh herbs! Almost anything could work in this recipe. Crazy about dill? Double the amount! Love basil? Add a huge handful! But if you can get your hands on fresh tarragon, I would highly recommend using it because it adds a unique and delicious flavor.

Greek Yogurt Green Goddess Dressing

Ingredients
  • 1/2 c. greek yogurt
  • 1/3 c. tahini
  • 1/4 c. fresh chives
  • 1/4 c. fresh tarragon
  • 1/4 c. fresh dill
  • 1/2 c. fresh parsley
  • 1/2 c. green onion
  • 1 clove garlic
  • 1/4 c. lemon juice
  • 1 t. salt
  • 2 T. water
  • 1 T. olive oil
  • 2 T. nutritional yeast
Instructions
  1. Blend all ingredients together in a food processor or blender until the mixture is completely smooth and green in color.
  2. Add more salt and pepper to taste if needed.
  3. Serve over your favorite salad! Will last in an airtight container in the refrigerator for a day.

I have been wanting to do my own version of a green goddess dressing for a long time. I realized that my favorite magic ingredient would be the perfect healthier substitute for mayo in this recipe! Greek yogurt actually works perfectly for salads because of how tangy it is, and along with an abundance of fresh herbs it makes for an EPIC dressing or dip. Go make it! Go now.
