April in Food

I haven’t done a monthly roundup in a looong time (maybe years?), but I would like to start doing them again! It’s just fun to look back at what I’ve made in the weeks before. I’ve posted so many recipes over the years that it’s so easy for them to get lost at sea. I’m throwing them a life vest.  Let’s jump into April!

Mango Persimmon Smoothie

Persimmons make perfect smoothie material and are great to add some extra sweetness. I LOVE playing with new fruit! And cliché stripey straws.

Cheezy Parsnip Fries with Smoky Tahini Sauce

That time when I posted a vegan recipe that wasn’t vegan. I’m an expert over here, guys. Thankfully my blogger buddy Lauren helped me out before it got too embarrassing. Recipe is now edited with a vegan option. 😉

Greek Yogurt Macaroni and Cheese

This was probably my most popular blog post to date. I saw on Pinterest that people have made it and enjoyed it and that makes me SOOO happy! I’m glad we can be cheese people together.

Honey Spelt Rolls

I’m so excited to have found spelt! I don’t know what took me so long to try this amazing grain. These are the perfect soft dinner roll to convert white bread eaters.

Tropical Black Rice Salad

Because mangoes and avocados are soul mates. And black rice looks cool.

THANK YOU ALL for making this last month a great one for the blog! Here’s to bigger and more delicious things to come in May! 🙂
