Dinner Tonight: Hot Caprese Pasta

I love summer ingredients. I can’t get enough. Every time the cold seasons arrive, I find myself wishing I had eaten more peaches and berries and cooked with more basil and tomatoes while I could. So this summer I’m going for it full speed, taking advantage of all the amazing fruits, vegetables, and herbs that are at their peak.

For dinner tonight I made us a pasta inspired by caprese salad. No recipe or specific quantities, just clean and simple ingredients. Fresh pasta from the farmer’s market, local tomatoes, basil, garlic, and a combination of smoked and fresh mozzarella.

This dinner only took me about 20 minutes to prepare, and the fresh ingredients did all the work for me. I’m always much happier trusting nature than I am relying on any sort of special cooking techniques.

    Oh and to answer your question, one of my favorite summer ingredients is corn. I especially love it grilled or roasted.
