Meal Plan Monday: Let it Snow?

Just when I thought spring MIGHT be actually arriving soon…

We got like 3 inches of snow yesterday. What in Sam Hill is going on?! It’s mostly melted now, but seriously…April starts next week. The sun needs to come out and stay out for good.

We got some nice weather for our Busch Gardens outing last week, but since then I’ve been passing the time indoors because it’s so darn cold out. Our flowers of the week occasionally trick me into believing that winter is actually over.

During my lovely indoor time I’ve gotten a lot of work hours in, caught up on some Real Housewives of Beverly Hills, and even ordered a new iPhone complete with new case.

And of course I did our weekly grocery trip and made our meal plan!

Sunday: leftover pasta primavera (I was at work)

Monday: baked chicken (for Jas), chicken-less chicken (for me), broiled zucchini and potatoes

I let myself try one new meat-free product every week. The TJ’s beef-less ground beef I tried last week was actually REALLY good and so I’m hoping for good things with this product.

Tuesday: stir-fry and thai vegetable dumplings

Wednesday: crock pot pot roast and veggies (for Jason), leftovers (for me, working night shift)

Thursday: burgers, Barefoot carrot salad, fries

Friday: on the road on the way to New Jersey

Saturday: Easter party with the in-laws!

Can’t wait for the famous Easter gathering. The food is amazing and I look forward to it all year. Plus we get to see Jason’s whole family! Last year’s festivities were epic and I’m sure this year will be no different.
