Meal Plan Monday: No More Breaks

We’re officially back to school and there’s now only 6 weeks of classes standing between us and graduation! I just realized that last week was our last school break EVER. So insane. I’ve been a student forever, I can’t believe this whole thing is coming to a close so soon. I’m ready for the “real” world, but not so ready to say goodbye to a regular spring, winter, fall, and summer break. I love breaks! Oh well.

Spring break had us all thrown off, but it’s time to get back to meal planning at home.

So here’s the plan.

Monday: Barefoot Contessa’s szechuan noodles

Good stuff! The sauce was very flavorful but next time I’ll definitely sauté the garlic inside beforehand. Raw garlic is just never never a good idea. It can mayyyyybe be passable in very small quantities (like for a salad dressing) but otherwise it’s just really not a wise idea. Good thing I already kissed my husband today because the dragon breath we’re experiencing from that sauce is no joke.

Tuesday: chili and rice

A standby in our house! We eat chili at least a couple times a month. I bought some faux ground beef for my portion of it so we’ll see how that goes.

Wednesday: working the night shift so I’ll pack leftovers with me

Thursday: tomato soup and grilled cheese sandwiches

Friday: enchiladas (I’ll be posting the recipe)

Saturday: BFD (not the Joe Biden kind, the “breakfast for dinner” kind 😉 )

 

Me and my dragon breath are going to go watch tv before bed.

    Ok. Question. What do you eat for lunch/breakfast?

    I know the answer for breakfast is hot cereals. But what about lunch? Do you do leftovers? Salads? I need help figuring out how to meal plan. I eat a lot of sandwiches.

    Lunch I usually do leftovers. And I also buy a couple things in my big grocery trip for the week that I can eat for lunch (like a boxed soup that I can have along with a sandwich or canned trout to have with cheese and crackers or a bagged salad with a fun topping like tortilla strips or avocado). Also the Cheese Shop, Wawa, and Moe’s contribute to my lunch options frequently. 😉
