Blogmas Day 11: Multigrain Italian Focaccia

We’re super busy in preparation for Christmas! Tomorrow we leave for New Jersey (where my hubster’s family lives) to spend the holiday. Every year I bake presents for Jason’s family, so that was my job today.

And those are only half the cakes I made! 🙂 I’m sworn to secrecy on the recipe for those cakes (my mom is a baker and she sells them) BUT I do have another great recipe for you today.

We’ve done just about everything for Blogmas…candy, brownies, salad, meat, pie, cake, drink…and now bread!

This is a fast and easy version of focaccia that everyone will love. I didn’t tell Jason that it was multigrain  and he proceeded to eat half the loaf all by himself. 😉

Multigrain Italian Focaccia

Prep Time: 20 minutes

Cook Time: 1 hr. rising time + 25 min. ba

Ingredients (serves 6)

  • 1 1/2 c. all-purpose flour
  • 1/4 c. whole wheat flour
  • 1/4 c. oat flour
  • 1 package instant yeast
  • 1/2 T. sugar
  • 1/2 t. salt
  • 2 T. butter
  • 3/4 c. water
  • olive oil
  • 3/4 c. asiago cheese (or parmesan or romano)
  • 2 t. Italian seasonings

Instructions

Microwave together the water and butter until the butter melts. Set aside to cool.

Mix flours, yeast, salt, and sugar together in an electric mixer.

Add the warm water mixture and knead with the mixture until the dough is smooth and elastic, about 3 minutes. If the dough is too sticky, add more flour by the tablespoon.

Shape the dough into a ball.

Coat a bowl with olive oil and place the dough ball inside.

Cover with a towel and leave to rise in a warm place until the dough doubles in bulk, about an hour.

Gently press the dough down and shape it into a ball again. Let it rest for 10 minutes. Preheat the oven to 375 while you let the dough rest.

Press the dough out into a large circle on a lightly greased baking dish.

Use your thumb to make deep indentations all over the surface of the bread.

Sprinkle on the cheese and Italian seasoning.

Bake in the preheated oven for about 20 minutes, or until the bread is golden brown.

The grains are great, but it’s really the sharp cheese on top that makes this bread incredible!

    In answer to the question you asked, I don’t have anything on my Christmas list this year. My honey and I have decided to not exchange gifts this year in order to save money to move early next year.

    The focaccia looks yummy! I made the cranberry nut gingerbread you posted last week and it came out really nice! It was a hit with those that got a chance to try it! I’ve never made bread like that before so it seems a bit intimidating, but I might give it a try! I really appreciate that you take the time to take pictures of the step by step process of how the food your making looks like. I’ve never tried honest tea before but then again; I don’t know if I’ve seen them much around here.. might have to look for them to give it a try. Hope you have a great holiday with your family!     I had new cookbooks and makeup on my wish list… and I got both! Yay! I have tried some of the Honest Teas and like them. One that I haven’t tried yet that sounds super yummy is the Honey Green Tea. Hope you and your family had a wonderful Christmas!!
