I hope you’ll forgive me for this day’s Blogmas entry coming in so late! I have had quite the full day of activities, and definitely still have a sleep deficit that needs fixing. But I didn’t want to ruin the streak by missing a day of Blogmas, so here I am!
Two of my girlfriends, Becca and Emily, are in town from D.C and it’s been so fun to have them here with us! We started off our morning with a homemade quiche lorraine.
Then we took care of some things at home before going out shopping and picture taking. Emily, who you probably recognize as my bff who makes a pretty frequent appearance here, is a fashion and beauty blogger and lately I have been her designated photographer. Taking pictures of people is so fun!

After taking some pictures, we headed back home so that I could make dinner.
On the menu was Chicken with Forty Cloves of Garlic, mashed potatoes, and this delicious salad:

Warm Goat Cheese and Spinach Salad with White Wine Vinaigrette

Prep Time: 15 minutes

Ingredients (serves 6)
For the salad
- 1 lb. baby spinach
- 1 c. drained mandarin orange slices
- 1/2 c. pecans, chopped
- 1 small log of goat cheese
For the dressing
- 1 garlic clove
- 1/2 c. white wine vinegar
- 2 T. honey
- 2 T. dijon mustard
- 1 T. fresh lime juice
- 1/2 c. olive oil
- 1/2 t. salt
- pinch of black pepper
Instructions
Preheat oven to 350.
Slice log into small disks and dredge each disk in chopped nuts. Bake the cheese log for about 5 minutes, just to heat it through.
Blend the dressing ingredients all together in the food processor until it’s smooth and well emulsified.
Top spinach leaves with the cheese, oranges, and the dressing.

I actually had to let Jason and the girls eat without me because, unfortunately, I had to work tonight and was literally running out the door to my shift once I was done cooking. Alas, you can see why I’m just a little bit tired. But I had some of the salad as soon as I came home and can testify to its deliciousness.
