Chocolate Buttermilk Waffles

What could be better on a Saturday morning?

You all know that I have a love for sweet breakfasts. The more it looks like dessert, the happier I am. Exhibit A:

You get the idea.

But whenever I make sweet treats like this for breakfast, I always make sure to make it while whole grains (and fruit, if I can) so that it still provides some nutrition. But I can promise you that no one will detect the whole wheat in these. They will only detect the delicious.

 

Chocolate Buttermilk Waffles

Cook Time: 2 minutes

Ingredients (2 waffles)

  • 1/2 c. all purpose flour
  • scant 1/3 c. white whole wheat flour
  • 3/4 t. baking powder
  • 1/4 t. baking soda
  • 1/4 t. salt
  • 3 T. cocoa powder
  • 1 T. sugar
  • 1 egg
  • 1 t. vanilla
  • 1 c. buttermilk
  • 1/4 c. vegetable oil or melted butter

Instructions

In a medium mixing bowl, stir together the flours, baking powder, baking soda, salt, cocoa powder, and sugar.

In a separate small bowl, whisk together the remaining ingredients.

Make a well in the center of the dry ingredients and pour in the mixed wet ingredients.

Whisk together until smooth.

Pour batter into a hot, greased waffle iron and cook according to waffle maker directions (generally this is a couple minutes, until steam stops coming out of the iron).

Sprinkle with chocolate chips, chopped nuts, or any other garnish that you like.
