WIAW: 4 More Years

Note: If you’re one of those people who is infuriated by all things Obama…well I’m sorry for you, because he’s the President. Also I recommend you just skip this post because I’m proud of him and ain’t afraid to show it. But come back later for food free of politics. 🙂

It’s probably no surprise to you all that I’m very happy with how the election came out! In fact, I’m writing these words at 10pm on election night, well before any final projections are made, because I’m VERY confident in the decision that the country will make (and by the time you’re reading this, has already made). I wish I could have volunteered more this time around but I feel good about what I did and I’m happy with the (very tiny) role that I played. I know that Obama’s presidency is going to be one of those things I tell my kids about all the time with great pride. Some memories from election day in ’08 (when Jason and I were in college and volunteering for the campaign):

I will remember that election night the rest of my life! We had just gotten engaged. Jason and I bought a bunch of food and some champagne and had our own little watch party in his dorm room. I cried when they finally projected that Obama was going to win.

And from this election night:

4 more years. Thank God…otherwise I would be out of health insurance and stuck with thousands more in student loans. I had real eggs in this basket!

Edited to add at 11:34 after the projection was actually made: YAY!!!!!!!!! I never doubted him, or our country, but I sure am relieved. 😀 Also, I cried for this acceptance speech too.

MOVING ON to food…the reason that you’re actually here.


 

Breakfast: hubby’s white whole wheat buttermilk pancakes

(recycled pic alert…forgot to take one this morning)

Lunch: green juice, turkey sandwich, butternut mac and cheese

I’m back to juicing! This one was a bunch of kale, an apple, and some ginger root.

I made a turkey sandwich on wheat bread with some havarti cheese and slices of our turkey breast from Hallowsgiving.

Mac on the side! I could eat that stuff all day.

 

Afternoon Snacks: gingerbread latte at DD, bowl of cereal with sliced banana

We swung by Dunkin’ on the way home from morning class for a pick-me-up. Apparently my caffeine tolerance is raising…I fell asleep 10 minutes after drinking this!

When I woke up I had a bowl of cereal before running off to my evening class.

Dinner: Armenian chicken, Trader Joe’s basmati rice medley, slow cooked kale

I love this chicken recipe! My mom has been making it for years and it makes a fantastic grilled chicken. I don’t have an outdoor grill, so I make this by browning it in a grill pan on the stove and finishing it off in the oven. (Add more salt if you use that recipe!)

This kale was awesome too! It’s a personal goal of mine to make kale in a way that Jason enjoys, and this was probably my first attempt that was actually successful.

    Even though I’m from the UK, I was hoping Obama would be reelected.

    Reading this brought a huge smile to my face. I am so proud of the many Americans who voted for Obama! We were at a basketball game during the election but I was glued to my phone the whole time and got to see them announce he had won as we were walking out. So happy!
