Sunday Dinner Tonight- 9/23

I want to thank you all SO MUCH for your answers and sweet comments from my reader survey last week. I was so thrilled to hear that you guys actually like the “dinner tonight” posts, and so I will definitely keep doing them! I got a few messages that suggested doing a weekly meal plan and I think that’s a great idea. Since I do my meal planning over the weekends, I’m going to share my weekly meal plan along with our Sunday dinner. I’m excited to try this new format!

I’ve been on QUITE the Food Network kick lately. I can’t get enough. I became a junkie long ago (I used to watch shows like Emeril Live and Mario Eats Italy with my mom when I was younger) but these days I literally come home from classes and just get lost in Food Network land. I don’t miss a day of the Barefoot Contessa. She’s my HERO. Seriously. Ina’s kitchen, her house, her style, her approach to food, her million gay best friends, her garden, her adorable husband…she’s just amazing. Tonight we enjoyed her Chicken with Forty Cloves of Garlic for dinner.

Lord. Have. Mercy. This was ABSOLUTELY INCREDIBLE. I can’t even put it into words. It’s definitely the most delicious chicken to pass my lips in quite some time. It’s now up there with our ultimate chicken favorites (along with Pollo en Fricase and my fried chicken). If you eat meat, please do your mouth a favor and make this chicken. You will not be sorry. I’m thinking of making it for my in-laws when they come to visit. That’s how good it is. πŸ˜‰

Along with the chicken we had Kath’s sweet potato fries. Great recipe!

(side note: anyone else obsessed with her baby posts?? Her little boy is so adorable!!!)

And some yummy green beans that I cooked with tomatoes (both from our local produce share), garlic, and onions.

This was exactly the kind of dinner we needed to start the week off right.

Monday: Jamaican curried chicken and vegetables (loosely using this recipe), fried plantains, rice and beans

Tuesday: Burgers, baked zucchini fries

Wednesday: Vegetable Lasagna

Thursday: Chicken Stuffed with Artichokes and Sun-Dried Tomatoes, broccoli, farro

Friday: leftovers!

 

I, of course, procrastinated on homework this weekend so I better get to it! Thanks for reading!
