WIAW: So Little Time

This semester we have night classes nearly every day of the week. Gone are the days of me liesurely standing in front of the stove spending 2 hours on dinner! During the time I would normally be doing that, now I’m sitting in a classroom. As sad as this makes me, I suppose it’s a good thing because soon I’ll be a real working lady, not a student, and I need to figure out how cooking will fit into a full-time working schedule. There’s too little time in the day!


But I ALWAYS have time for What I Ate Wednesday!

Breakfast: oatmeal with fresh raspberries and white chocolate

Oh yes, I went there. The best bowl of oatmeal I’ve had in a long time.

Lunch: whole wheat pita stuffed with turkey, spinach, tomato, hummus, a little mayo, and monterrey jack cheese

I stuffed everything inside and popped it in the oven for a bit to get warm. I left it in there a bit too long–I almost had one huge pita chip at the end! But it was still delicious.

Before I ate I stuck dinner ingredients in the crockpot! I was in class until 7:30 tonight so there wasn’t time to cook.

Snack: strawberry greek yogurt topped with granola

Dinner: Chicken Provençale, whole wheat couscous, spinach salad

The crockpot chicken actually came out well! On the side I quickly put together a spinach salad with tomatoes, dates, and a homemade vinaigrette. And couscous takes like 7 minutes to cook! A full dinner ready in 15 minutes? Awesome.

And I had my usual drink on the side. No idea why my pictures of drinks are always crooked and disorienting. I’ll work on it.

Dessert: chocolate chip cookie experiment

I’m on the hunt for my perfect healthy chocolate chip cookie. This test came out tasty but I need to tweak the recipe so that the cookies don’t spread so much. Hopefully I’ll have a winner to share with you soon!

You might have noticed that I’ve been doing “dinner tonight” posts showing you what we eat for dinner on certain nights.I started doing it because I cook most nights of the week and thought it was silly to never have you see those meals. But I’m not really sure whether you guys like that sort of thing and I haven’t gotten much response. So I thought I would just ask you! Answer honestly–it doesn’t hurt my feelings! I’m always trying to update and improve this space so I appreciate input.
