WIAW: Back to School

Sorry for another What I Ate Wednesday that’s posted after midnight! I was too busy being very comfortable on the sofa with my husband watching The Descendants. I’m considering jumping on the bandwagon of showing Tuesday eats for WIAW (even though every bone of my English major body is fighting it because I take the title literally and am stubborn…) in the future so that these posts don’t come so late. We shall see. In the meantime, here’s another look at what I ate…on this Wednesday…just to be clear. 😉

 

We’re back in school now and it’s definitely been a challenge to stay on a good eating routine. Bad habits lingering from the summer mixed in with some life challenges and night classes every day of the week make for a very difficult healthy eating atmosphere! But we’re trying. And that’s all you can do. I’m not going to make excuses or explanations for why there aren’t enough fruits and veggies in my meals (does anyone else keep a running “5-a-day” tally in their head that they can’t let go of??) or why I made white rice instead of brown…it just happens. I know that you get it. 🙂 Moving right along.

Breakfast: zucchini waffle, coffee

I just tossed some shredded zucchini into leftover waffle batter. Very tasty! It looks a little strange because I wasn’t that hungry so I didn’t fill up the waffle iron. 🙂

Morning Snacks: zucchini bread, apple

On my way home from morning class I stopped by a local produce stand. The farmer recommended I try some Ginger Gold apples so I did! It’s a Virginia variety that starts growing in the late summer. SO delicious. Especially with a slice of the zucchini bread I made yesterday.

Lunch: leftover chili with rice and cheese

Dinner: Japanese takeout stir-fry noodles

Evening Snack: caesar salad with grilled chicken

I started to feel bad about not eating anything green the entire day (can zucchini bread count?), so when I got home from night class I put together a quick salad.

Dessert: kettle corn

Hubster surprised me with a big bowl of his famous homemade kettle corn before the movie. Delish!
