Mixed Berry Crisp

It’s great to have recipes in your back pocket that you can just make on a whim and know that they’ll turn out great! This is one of those recipes for me.

The topping comes together in a couple minutes with the help of a food processor, which means the whole thing can be done in half an hour from beginning to end! Baking it in ramekins makes it the perfect single serving dessert.

Not to mention that is a pretty darn healthy dessert! To make it even healthier you can reduce the sugar, but it doesn’t have much as it is. I realized a few days ago that it’s vegan, but that’s actually just a happy accident! With berry season around the corner, you need to do yourself a favor and make this pronto.

 

Mixed Berry Crisp

Ingredients (serves 4)

For the Topping

  • 1/4 c. toasted almonds
  • 1/4 c. old fashioned oats
  • 1 1/2 T. all-purpose flour
  • 1 1/2 T. brown sugar
  • 1/4 t. cinnamon
  • 1/8 t. salt
  • 1 1/2 T. cold Earth Balance spread (or butter)

For the Filling

  • 1 2/3 c. berries, fresh or frozen
  • 2 t. sugar
  • 2 t. lemon juice
  • 1/4 t. cornstarch

Instructions

Preheat oven to 375.

In the bowl of a food processor fitted with steel blade, pulse the almonds several times until the largest pieces are pea sized.

Add the oats, flour, brown sugar, salt, and cinnamon and pulse a few times to combine and break up the oats a bit.

Add the Earth Balance and pulse just until pea sized balls form.

Chop the berries into small chunks (this helps them to fit into ramekins).

In a large mixing bowl, stir together the berries, cornstarch, lemon juice, and sugar until the berries are coated.

Grease four ramekins and split the berry mixture between them.

Sprinkle crumb topping over the berries.

Bake in the preheated oven for 20-25 minutes, or until the topping is golden brown and the berries are bubbling.

Let the crisps cool for at least 10 minutes before eating.

As if being easy, healthy, and yummy wasn’t enough, probably the best thing about this recipe is that it’s incredibly flexible. Make it your own! You can use any berries or combo of berries that you want (remember last week when I made them with fresh strawberries and blackberries?) or don’t even use berries at all, I’ve used this same recipe for apple crisp! Or mix it up with walnuts or pecans or a mixture of nuts inside the topping! The possibilities are endless. And delicious.

When my anything-healthy-hating husband cleans his dish, you know it was a success. šŸ˜‰

    I love a good fruit crisp, it is by far one of my favorite desserts. It is such a simple but lovely dessert! Your version looks and sounds fabulous of course. I will have to try to serve these soon using individual ramekins as opposed to a larger dish, after all it is berry season here in Louisiana. As a matter of fact our little area is having it’s annual strawberry festival this weekend šŸ™‚
