Cinnamon Chip Bread

Oh boy, do I have a good one for you today.

This is a recipe I’ve been meaning to make for you guys for months and months! And there’s a reason for that. Y’all. Y’ALL. This bread is incredible. Soft, sweet, and full of cinnamon.

The secret to this bread, besides a great dough with white whole wheat, is lots of delicious cinnamon chips. And the reason I waited so long to make this for you guys is because these chips are HARD to find! I don’t know if it’s a regional thing or what, but I searched here in Virginia for months before finally finding these beauties.

Another key to this awesome loaf was a new kitchen appliance!

I’ve been wanting a food scale forever and so I was thrilled when the great folks at OXO sent me one for my kitchen. After years of helping my mom with her bakery business, I know the importance of weighing ingredients to make sure you get perfect baked goods every time! We each have a different “hand”, so one person’s cup will actually end up being another person’s 3/4 cup. Not good! Measuring by weight gives you a much more accurate recipe! This scale has a clear, digital display and can measure up to a whopping 5 pounds of food. And the best part is…I get to give one of these great scales away to one of YOU! More details at the end of the post. But first, the delicious recipe, which is adapted from my Cinnamon Raisin Swirl Bread.

 

Cinnamon Chip Bread

Prep Time: 20 minutes + 2 hours rising ti

Cook Time: 45 minutes

Ingredients (10 servings)

  • 3/4 c. 2% milk
  • 1 c. water
  • 1/4 c. organic sugar
  • 1 package (2 1/2 t.) dry active yeast
  • 9 oz. white whole wheat flour (about 2 cups)
  • 15 oz. unbleached all-purpose flour (about 3 cups)
  • 1/4 oz. salt (about a teaspoon)
  • 1/8 oz cinnamon (about a teaspoon)
  • 2 eggs, beaten
  • 1/4 c. softened Earth Balance or butter
  • 8 oz. cinnamon chips (about 1 1/2 c.)

Instructions

In a glass measurer, heat the milk and water in the microwave until it is warm (not hot). Remove from microwave, stir in yeast and 1/4 c. sugar and let sit on the counter until the yeast is fully activated (about 10 minutes).

In your mixer/food processor fitted with a dough blade/hook, combine the flours, salt, and cinnamon.

Add the yeast mixture, eggs, and Earth BalanceLet it knead until smooth and elastic (it will be sticky). If your dough is too stick to come together, add AP flour a tablespoon at a time until it does.

Drizzle a little oil (I used canola) around the edges of the dough and use a spatula to pull the dough away from the sides of the bowl and make a ball that’s covered lightly in oil.

Cover the bowl with a damp towel and let the dough rise in a warm place (I use an OFF oven with just the light on inside) until it has doubled in bulk.

Gently knead the dough down and knead in the cinnamon chips on a floured surface.

Shape the dough into a log the length of your bread pan. Grease the pan and place the dough log inside.

Cover with a towel and let rise again in a warm place until the dough doubles in bulk again.

Preheat your oven to 350 degrees and bake the loaf for 45-50 minutes. When the top gets golden brown (should be around the 25 minute mark), cover it loosely with aluminum foil to stop the browning until the bread is done.

Remove the loaf from the oven and let it cool in the pan for 15 minutes before flipping it out of the pan and letting it cool completely on a cooling rack, about 30 minutes.

Slice and enjoy!

While making this bread does take some time, because of the rising and cooling, it isn’t at all difficult to make! I mean that! Try it, you won’t be disappointed. And if you’re really bad, you could do this while it’s still warm…
