Garlic & Herb Goat Cheese Spread

I’ve been ALL about snacking lately. I don’t know what it is, but I’ve been in more of a “graze all day” mood rather than a “sit down and eat 3 meals” mood. I’ve plowed through my share of Trader Joe’s snacks in the past few days (including a delicious bag of plantain chips which I demolished in 24 hours), and I’ve been making some fun snacks of my own. Last night for dinner we enjoyed a delicious goat cheese and arugula pasta, and I’ve been daydreaming about goat cheese since then.

So I decided to enjoy the rest of that delicious chèvre log and make an easy snack!

I mixed some fresh herbs and seasonings with some soft goat cheese and greek yogurt (the full-fat variety, which is incredibly delicious) to make a flavorful goat cheese spread.

This is not only great for a snack or sandwich condiment, but it would be perfect as an appetizer for a dinner party. I paired the spread with some multigrain crackers from Trader Joe’s…

…and fig spread (also from Trader Joe’s)!

The combination of the sweet figs with the tangy goat cheese and savory herbs is a match made in heaven. I imagine the cheese spread would also be wonderful with other fresh or dried fruit like apples or apricots.

I added Garlic Gold nuggets for an extra boost of flavor, but it’s optional and if you don’t have them you could use some minced roasted garlic or garlic powder instead. However the nuggets are a great addition if you do have them.

It takes less than five minutes to put together and you will have guests thinking you paid a lot of money for it in the store! It’s like Boursin but better!

Garlic & Herb Goat Cheese Spread

Prep Time: 5 minutes

Ingredients (serves 4-6)

  • 1/2 t. chopped fresh rosemary
  • 1/2 t. chopped fresh thyme
  • 2.5 ounces of chevre (soft goat cheese)
  • 2 tablespoons plain greek yogurt
  • 1 t. olive oil
  • 1/2 t. salt
  • 1/4 t. black pepper
  • 1/2 t. Garlic Gold nuggets (optional)

Instructions

Make sure that you finely chop the herbs so that all the oils and flavor are released.

Place all the ingredients in a medium sized bowl.

With a whisk attachment of a hand mixer (or a sturdy spoon), mix the ingredients very well until it forms a smooth mixture with the herbs evenly distributed throughout.

Chill until ready to serve.

Goat cheese has a very unique flavor, but I’m pretty sure if you love it you LOVE it. And I LOVE it. This spread is much lower in fat and cholesterol than your average cream cheese based spread, and it provides more calcium too!

It’s amazing how a simple and clean combination of fresh, natural foods can be so irresistible. This is on my list of “things to serve when I have my own house and host a gigantic classy dinner party”. It’s a long list, and it will probably be a long wait. 🙂 In the meantime, I’ll just eat the test dishes myself.
