Freedom Friday

We are officially on Spring Break! And my new antibiotics are officially successful! I’m not back to normal but I’m getting there and that is exciting. I can pretty much go back to normal activity now, as long as I bring a lot of tissues. 😉 Today I woke up so energized and just thrilled at how much better I feel. I immediately went downstairs and whipped up a big pot of oatmeal for the two of us.

I used the rolled oats that we got in our CSA share, which come from Miller Farm. I was very curious to see how these would be different from the Quaker rolled oats that I usually buy, and I was shocked at the difference in taste! They didn’t look all that different to me but on second glance the oat pieces do seem to be thicker than the store-bought variety.

They were DELICIOUS! Way better than what I usually eat. They did take longer to cook and required more liquid (about 20 minutes on the stovetop instead of 10 and about 1 1/2 c. of milk instead of 1 c. ) but it was well worth the extra effort. They came out thick and creamy and so much more tender and fluffy than my oats usually are. With some White Chocolate Wonderful peanut butter on top this breakfast was pretty darn awesome!

After breakfast I was really feeling like we needed to do something fun to celebrate being free and on vacation! I was gchatting with my genius girlfriend Emily and she suggested margaritas. I was immediately sold. I few hours later we mysteriously found ourselves at a Mexican restaurant.

El Tapatio is in the New Town area and we’ve been meaning to try it for a while because it has great reviews online. Once inside, I scanned the menu for the perfect margarita and decided on the “Fuzzyrita” which has the addition of peach schnapps.

Yes. It was as delicious as it looks. This was a dang good margarita, the best I’ve had in the ‘burg. They even give you a little shot glass on the side with some of their house tequila…see it? Jason ordered a plain margarita and drank every last drop.

Of course we enjoyed some chips and dip while sipping on our drinks and waiting for our food…

But the service was very fast so we didn’t have to wait long! I ordered the Speedy Gonzales, which is an enchilada, a taco, and a side of rice.

Everything was delicious. The rice was perfect and the meat was so well seasoned. I haven’t had good Mexican food like this in so long! Jason and I decided that this is hands-down the best Mexican joint in the ‘burg, and we will definitely be back.

I’m off to enjoy more FREEDOOOOMMMMM!!!! Spring break has got to me my favorite time of year!!!

OOPS! I forgot something when I hit ‘post’! My bad. 😛 Yesterday I mentioned that I’m doing the March Photo a Day challenge this month but I wanted to explain it a bit more for those of you who may not be familiar!     So glad I just caught up on your posts because I’ve been wondering what the March photo a day thing was! Cool idea 🙂 Got introduced to PB and Co. way back in high school when my mom gave me a jar of White Chocolate Wonderful, so I have fond memories of that peanut butter. Also, I’m immensely jealous of that margarita. I have a weakness 😛
