Brownie Pancakes with Chocolate Hazlenut Sauce

What could be better than pancakes full of chocolate?

Pancakes full of chocolate that are topped with chocolate sauce.

When something can classify as both dessert and breakfast, you know it’s going to be awesome. This recipe actually isn’t that high in sugar, but you could always reduce or increase the chocolate chips and chocolate sauce to your liking. But why would you want less chocolate?


Brownie Pancakes with Chocolate Hazlenut Sauce

Ingredients (serves 2)

  • 1/2 c. milk (any kind you like)
  • 1 egg
  • 2 T. canola oil or melted butter
  • 1 1/2 T. sugar (I use turbinado)
  • 1 t. vanilla extract
  • 2 T. plain yogurt
  • 1/2 c. all-purpose flour
  • 1/4 c. white whole wheat flour
  • 1/4 t. salt
  • 1/8 c. unsweetened cocoa powder (add more if you want a dark chocolate flavor)
  • 1 1/2 t. baking powder
  • 1/2 c. mini chocolate chips
  • 1/4 c. Nutella or other brand of chocolate hazlenut spread
  • 1 T. milk

Instructions

For the pancakes

In a small mixing bowl, whisk together the egg, milk, vanilla, sugar, oil, and yogurt.

In a medium mixing bowl, combine the flours, salt, cocoa powder, and baking powder.

Pour the wet ingredients into the dry and whisk just until combined (it’s OK if it’s lumpy, you don’t want to overmix it).

Fold in the chocolate chips.

Pour the batter in 1/4 c. amounts onto a griddle preheated to 325 degrees.

When the pancakes start to bubble, flip them over and cook for a couple minutes on the other side.

For the chocolate sauce

Heat the tablespoon of additional milk in the microwave until very hot. Stir in the Nutella until it melts down and creates a sauce. Add more Nutella if needed.

When the pancakes are done cooking, top them with sauce and additional chocolate chips as desired.

I have to admit that for some reason I always need something sweet in the morning. If I’m having an egg sandwich, it needs some jelly. If I’m having a biscuit, it needs some honey. My sweet tooth is ferocious, and that’s okay with me. These babies really hit the spot.

 

I’m gonna go out on a limb and say that I’m sure some of you guys are chocoholics too, so you should totally do yourself the favor of having chocolate for breakfast.

    Sometimes when I read your recipes and it says “by Lauren,” I like to pretend I made it up. Just kidding, but I would be proud if I made something as deliciously chocolate as these. I’ve made chocolate pancakes before but haven’t ever thought to post a recipe, silly me!

    These look so delicious. I’ve never tried making pancakes & I was wondering, if I don’t have a griddle could I try in a frying pan?

      Sure, a skillet will work just fine! Just make sure you leave enough room in the pan, sometimes it can get a little cramped.
