Today we did something huge. We bit the bullet. We went to the gym. This is big news, people. I think it’s been…at least 3 years since I set foot inside one! No, I’m not kidding. I’ve known for a long time that all this work I do to keep myself healthy with what I eat is not giving me full body health. Physical activity has to be part of a healthy lifestyle, we all know that. So I’m going for it! And so is Jason, because I’m forcing him to. 😛
News this big calls for a celebration salad!
This salad is simple, seasonal, and delicious. That is my cooking mantra!
I tried roasted chickpeas for the first time today to add to this lunch. I have to admit that I usually hate chickpeas unless they’re inside hummus. But I have read all over the place that when chickpeas are roasted they transform and get all crunchy and delicious. The rumors are TRUE–chickpeas are so good like this! A perfect crunchy addition to salad.
Along with the roasted chickpeas I tossed together some mixed greens (I’m lovin’ that new salad spinner!) and half of a big, juicy grapefruit. Fruit, vegetable, and protein all in one easy bowl!
Even though a lot of my favorite fruits aren’t in season right now, the citrus fruits have been amazing lately. That’s maybe the only good thing about winter in my opinion! If you’ve never had grapefruit in a salad, put that on your to-do list while they’re still so beautiful and juicy!
You can never have too many pictures of good food, right??
We won’t be heading back to the gym tomorrow (I’m deeming it a yoga day) but hopefully we can get our butts back there on Saturday. For now I think we’re going to go to the movies and enjoy another evening of relaxation.
