Quick and Easy, Please!

Don’t ask me how I’m still awake. I don’t know the answer myself. My sleep last night consisted of a nap somewhere around 4am….not even sure what time I “woke up” to keep studying. Yeesh. Since I haven’t had much spare time lately, I haven’t been doing my usual posts with photo shoots and recipes and fun but I thought of something that I wanted to share with you all in a quick post today. I try not to give into the temptation of eating out just because we’re busy, mostly because it’s way too hard on the wallet. So I thought I would show you guys the quick and easy meals we’ve been eating for dinner this week! ALL of these require 30 minutes or less of active cooking/prepping time (one requires some baking time) and are great when you’re short on time or energy but still want a yummy home cooked meal!

This fried “rice” dish is adapted from this recipe and I just love the idea of it. Jason usually hates cauliflower, but admitted that he thought this was actually pretty good. I thought it was delicious! I love cauliflower–it’s so versatile. Next up is a new favorite of mine ours!

Did you know that you can roast your squash seeds just like you would pumpkin seeds? They’re just as delicious! I roasted the seeds from the spaghetti squash with a little coconut oil, cinnamon, salt and sugar, and they made an awesome study snack later on!

And last but not least…tonight for dinner we enjoyed an old favorite: my mother-in-law’s shrimp pasta. I used whole wheat angel hair this time and it was delicious. Believe it or not, it has been unseasonably warm here and we are still getting good tomatoes from this region!

I made a really good cabbage roll recipe last night that was also quick and easy, but I was entirely too exhausted to take pictures of it by the time we sat down to eat. šŸ˜› That recipe will have to wait for another day.

I’m going to go try and get some rest before starting up the next round of studying!

    I love a quick and easy recipe when I am stuck for time. These all look fab!
