Apple Cider Pancakes

Happy Halloween! In case you couldn’t tell from my lack of themed recipes, this isn’t one of those holidays that I’m incredibly festive about. I have to admit that I really don’t see the excitement of Halloween unless there are little ones around. The only thing about Halloween that makes me excited is the discounts on candy the week after. šŸ˜› So to me this morning was just a regular fall morning, one that was made even better with some awesome pancakes.

I made these pancakes with whole wheat and oat flour, so they are very filling and nutritious. Apple cider and fall spices in the batter give them that comforting fall flavor that’s perfect for chilly mornings like this.

Along with a cup of hot cider, this breakfast definitely takes the sting out of the fact that it’s Monday morning.

    I love to use apple cider when baking, it just makes things taste like fall šŸ™‚

    I really do not decorate or cook for Halloween, and we actually didn’t do anything tonight since our weekend was full of festivities. I made a nice big pot of chili and now football!

    I blame my dislike of Halloween on the fact that any holiday fun is always overtaken by the fact that I have to stress out about putting a costume together/spending money on one. I love that you used cider in these pancakes! So festive and it sounds like a good excuse for me to buy cider šŸ™‚

    Oooh, these look fabulous! I love apple cider! I bet these would be great with some grated apples mixed in – yum!
