Greek Pizza for One

We can’t wait to get the heck out of here and get on the road to Georgia for the summer! Only a few more days until we’re home free. There are many things I am looking forward to once we get there!

We used the other half of the dough I made for garlic knots a couple days ago for a pizza lunch today. I love it when doughs can serve double duty! And pizza is essentially goof-proof, unless of course it’s the one time I have company over. Jason had his usual cheese and pepperoni, and I was in the mood for something different so I made a greek inspired pizza!

I had a green monster this morning (a chocolate one, it was sooo good, recipe soon to come) so I didn’t feel the need to pile this up with veggies, but I did add some spinach and then some roasted chicken for protein.

Greek Pizza for One

  • about 2/3 c. pizza dough (recipe here)
  • 1/3 c. marinara sauce
  • 1 c. spinach, sauteed
  • 2 T. olives, sliced
  • 1/2 c. roasted chicken, shredded
  • 1 T. sun dried tomatoes, sliced
  • 1/4 c. marinated artichoke hearts, sliced
  • 1/3 c. feta cheese, crumbled (or mix of mozzarella and feta)

-Roll dough out on a floured surface until about 1/4″ thick (it will rise in the oven). Prepare toppings.

-Preheat oven to 450 degrees. Sprinkle pizza stone or cookie sheet with cornmeal and transfer dough to it. Spread marinara over the the dough with a spoon (except for the very perimeter of the dough). Sprinkle toppings over the sauce.

-Bake for 10-15 minutes, or until cheese is melted and crust just begins to brown. Let cool a few minutes before slicing. Serves one as an entree portion.

So awesome! If you haven’t ever tried to make pizza before you really should! It’s easier than it sounds and you can make it exactly the way you want it.

    Love this pizza; yummy. I just made a similar pizza last night and loved it….yummy feta n’ chicken…can’t go wrong with that tasty combination!
