Strawberry Shortcake Oatmeal

Today is a very exciting day because this is the LAST WEEK OF OUR FIRST YEAR OF LAW SCHOOL!!! I can’t believe how fast the first year went by, I’m still reeling. I feel like I just graduated. And just got married. Hmmm…

So I actually woke up HAPPY this morning even though it was 6am because I know that I only have a few more days of these early classes left. And next year we get to choose our classes, so no more 6am wakeup time for this girl. I am not a morning person one bit. So after waking up happy, I had a bowl of cereal with some sliced strawberries. One hour later, I was starving. That’s the only thing I don’t like about cereal. So I decided to make a bowl of this!




It doesn’t actually have shortcake, but it sure does smell like cake when it’s cooking. So good! I’m all about the flavored oatmeal these days.

Strawberry Shortcake Oatmeal

  • 1 c. soymilk
  • 3/4 c. old fashioned oats
  • 3/4 c. strawberries (about 5 berries)
  • 1/3 c. vanilla soy yogurt (or regular yogurt)
  • 1 t. vanilla extract
  • 1 T. honey
  • 1 T. toasted wheat germ (optional)

-In a small saucepan heat the milk over medium heat until boiling. Add the oats and whisk occasionally for 5 minutes.

-While the oatmeal is cooking, blend the strawberries, yogurt, vanilla, and honey in a blender until smooth.

-Add the strawberry mixture to the pan and whisk together, cooking for an additional minute. Remove from heat and allow to cool for one minute. Serve with wheat germ on top if desired. Makes one large serving of oatmeal. Enjoy!

Tastyyyy. Strawberries are amazing, they’re the reason red is my favorite color.

Jason is making dinner tonight! (Cue the Jaws music…) It’s an anniversary of ours (I think like 4 1/2 years we’ve been together? Not married, just in a relationship 🙂 ) and so he’s being really sweet and wanted very badly to make dinner on his own. I’ll do a post on it later! I don’t even know what it is, he wants it to be a surprise.
