Cinnamon & Honey Roasted Peanut Butter

I’m glad I planned ahead and took these pictures yesterday when it was nice out and I had time! Today has been very long and the skies have turned grey again…but tomorrow I don’t have class so I’m really looking forward to getting some sleep and doing some cooking. I have been experimenting further with peanut butter and decided it was time to try a flavored version! The result is SO TASTY and still healthy to boot! I also discovered that processing the peanut butter a few minutes longer makes it soooo super smooth and keeps it soft longer (even after refrigeration). I just enjoyed some of this on a banana, it was AWESOME.

The flavor of the cinnamon is really subtle, but then the taste catches up with you a few seconds after you take a bite. YUM!

Cinnamon & Honey Roasted Peanut Butter

  • 1/2 lb. roasted and lightly salted peanuts
  • 1 t. canola oil
  • 2 T. honey
  • 1-2 t. cinnamon (to taste)
  • 1 t. vanilla extract

-Start by processing just the peanuts in the food processor.

-Once the butter is smooth (about 2 minutes), add the remaining ingredients. Continue to process for another 3 minutes. Empty into a jar with a spatula.

-Makes 1 8 oz. jar of peanut butter.

I have some serious plans for this peanut butter, none of which involve it sticking around longer than this week. šŸ˜‰

    Yum! I bought some 100% peanut butter recently so will hold off on making my own as yet, but am tempted to add honey and cinnamon to that one! What a great flavour combo! Yum!
