Spring Sunday Dinner: Honey Baked Ham, Mini Sweet Potato Souffle, Green Beans Almondine, and Quick Yeast Rolls

Today was SUCH a beautiful day outside. One of those days that I’ve been dreaming about during this long winter… They even had tulips at the grocery store! I had to get a plant.

Daylight savings I’m not too crazy about. But if it means that spring is finally here, then I can be down with that. So to go along with a perfect spring day, and the last official day of our break, we had a lovely spring Sunday dinner. Now I realize that ham is not the healthiest of meat choices, but it is delicious, and having one or two a year will not hurt us.

I hate that all my dinner and dessert pictures are all crazy dark and don’t have natural light, but with the way our schedule is we don’t usually eat dinner till 8pm or so. So sorry about the darkness…maybe I’ll try to experiment with the lighting? My dad is a professional photographer after all, maybe he can give me some pointers!

Old-Fashioned Honey Baked Ham: recipe from Bon Apetit here.

Mini Sweet Potato Casseroles

  • 1 large sweet potato or 2 small sweet potatoes
  • 3 T. brown sugar
  • dash of cinnamon
  • dash of nutmeg
  • 2 T. butter or flavored butter spread like Earth’s Balance
  • 1 T. orange juice
  • 1/2 c. mini marshmallows

-Cut sweet potatoes into large chunks and boil in a large saucepan until tender (20-25 minutes).

-Drain the potatoes when they are tender and mash with the remaining ingredients. Beat with an electric mixer or stir with a whisk until light and fluffy.

-Spoon the sweet potato into ramekins and top with marshmallows.

-Bake in a 350 degree oven for 10 minutes, until the marshmallows begin to brown.

Green Beans Almondine

  • 1 10 oz. package of green beans
  • 2 T. chopped almonds
  • olive oil
  • salt and pepper to taste

-Blanche green beans or steam them in their bag according to package directions.

-In a skillet heat about 1 tablespoon of olive oil over medium heat. Add almonds and stir to cook for about 1 minute.

-Add green beans and sautee about 5 minutes, adding salt and pepper to taste. Serve hot.

 

Quick Yeast Rolls Recipe

This was a great alternative to my regular yeast roll recipe because it doesn’t take quite as long to make. I didn’t adjust the original recipe at all so I’ll just give you the link for it.

Seeing as this was a 6 pound ham for just the two of us, we’ll be having ham related dishes for quite some time (cobb salad anyone?).

    Wow, despite the dark lighting (which lends to a bit of dramatic flair, I think) your food looks delicious! I love your mini sweet potato casseroles. I think I am going to have to try that…and your rolls recipe… 🙂

      Aha, I guess it is dramatic, I hadn’t thought of it that way! HAHA! The mini casseroles were so easy and yummy, you should try them!
